Scungilli Salad

Level: Easy

Ingredients:

1 - 29 oz LaMonica Scungilli (drained & rinsed)
2 stalks of celery, chopped
3 cloves of garlic, chopped
2 sprigs of Italian parsley, chopped
8 oz black olives (pitted, sliced, and drained)
4 tbsp olive oil
2 lemons, juice only
1/2 tsp salt
1/4 tsp black pepper

Instructions:

Place scungilli, garlic, oil, olives, celery, and parsley into a large bowl.

Add salt & pepper to taste. Sprinkle with lemon juice. Mix well.

Store in refrigerator until ready to serve.
